Makassar, 31 Juli 2018 Halo berjumpa lagi dengan saya, kali ini saya sudah beranjak ke semester 5. di semester 5 kita lebih fokus basic pastry & bakery. pada hari ini kami membuat 2 product yaitu sugar dough & croissant. mari kita cari tahu terminology dari kedua product tersebut. Sugar dough Sugar dough adalah adonan yang digunakan untuk membuat kue kering, berasa manis dan mengandung banyak lemak. Dalam pengerjaan adonan sugar dough tidak boleh terlalu banyak menggunakan tepung sawur, karena dapat mengakibatkan hasil kue menjadi keras. Sugar dough biasanya dipalikasikan menjadi kue kering dengan berbagai macam topping manis seperti icing , chocochip, kismis, dll. Sugar dough juga bisa digunakan sebagai alas pie atau tutup pie manis. Saat selesai memanggang baiknya menunggu agar produk dari sugar dough dingin dahulu untuk mengangkat nya dari loyang dikarenakan saat panas produk sugar dough masih lunak sehingga mudah hancur.
