Makassar, 20 April 2018 Beansprouts Pronounce it : been sp-rowts Widely seen as a major, somehow magic, ingredient, beansprouts have little more nutrition than other fresh vegetables. But they do have novelty of flavour and a usefully different texture. They are overused by takeaway restaurants to bulk up servings of what are otherwise very meagre or mean proportions. The two most common beansprouts are the green-capped mung bean and the bigger, yellow-capped soy bean. They can be eaten raw but this is best avoided unless the source can be identified as safe, because beansprouts are associated with many food poisoning outbreaks. It’s best always to rinse and then cook sprouts lightly, either by stir-frying or microwaving. Availability Widely available and with care can be grown at home. Choose the best Sprouts should smell fresh and green and be firm to the touch. Avoid any with browning, that are floppy or that smell acidic or otherwise suspic

Salade Nicoise Salade niçoise (French pronunciation: [niˈswaz]), la salada nissarda in the Niçard dialect of the Occitan language, is a salad that originated in the French city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives, anchovies, and dressed with olive oil. It has been popular worldwide since the early 20th century, and has been prepared and discussed by many famous chefs. Delia Smith called it "one of the best combinations of salad ingredients ever invented and Gordon Ramsay said that "it must be the finest summer salad of all. It can be served either as a composed salad or as a tossed salad. Freshly cooked or canned tuna may be used. For decades, there has been significant disagreement between traditionalists and innovators regarding which ingredients should and should not be included in a salade niçoise. According to traditionalists, it excludes cooked vegetables. The salad may include raw red peppers, shallots, arti

Bamboo Shoots Pronounce it : bam-boo shoo-tz As expected, these are the very young shoots of many types of bamboo. They must be thoroughly cooked before use because most will contain elements poisonous to human beings. Widely used throughout Asia, from Myanmar to Nepal and, of course, China. Once cooked or canned, the flavour varies according to the variety used, but is generally very mild and undistinguished. Thus bamboo shoots are used mainly for texture and general interest, something common in Asian cuisines. Availability Canned bamboo shoots are commonly found in Asian supermarkets and in larger supermarkets. Choose the best There’s not much choice but for most Western uses, choose bamboo shoots in water or salted water, rather than in vinegar or anything else acidic. Store it Once the can is opened, treat as any other cooked vegetables and keep covered and chilled, when bamboo shoots will have a shelf life of well over a week.
