- Bika Ambon
Bika Ambon is one of the typical food of cakes from the city of Medan, North Sumatra. This one cake has a characteristic with yellow color and has on the hollow inside. In addition Bika Ambon cake also has a distinctive flavor and aroma that makes us addicted to eat it. In the city of Medan, Bika Ambon cake is already very famous and became one of the culinary icon of community pride there. Ingredients
Yeast dough
- 50 ml coconut water
- 8 g instant yeast
- 50 g flour
- 1 pinch salt
- 250 ml coconut milk
- 3 pandan leaves
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 1 vanilla bean, halved and seeded
- 2 g salt
- 6 eggs
- 4 egg yolks
- 150 g sugar
- 2-3 drops yellow food colouring (optional)
- 135 g tapioca flour, sieved
How to make
- In deep bowl, combine coconut water, yeast, flour and salt and mix well into an elastic dough. Cover with a damp towel and set aside at room temperature for 1 hour
- In a saucepan, combine coconut milk, pandan leaves, lemongrass, kafflir lime leaves, vanilla bean and salt. mix well and bring slowly to a boil. set aside and cool to room temperatur. strain.
- In a deep bowl, combine eggs, egg yolks, sugar, flavoured coconut milk and optional food colouring and whisk well. fold in tapioca flour and blend into a smooth batter that has a rather liquid texture.
- Add starter yeast and blend into a smooth dough. The consistency will be rather liquid, similiar to a pancake mix.
- Dust a cake pan or muffin moulds with flour and fill evenly with batter.
- place in a moderately hot oven at around 160 degrees celcius for 20-30 minutes until golden brown.
- Bubuh Injin
Ingredients
- 500 g mung beans, washed and soaked for 8 hours
- 1 litre light coconut milk
- 50 g ginger, pealed, sliced, and crushed
- 2 pandan leaves, bruised
- 150-200 g white sugar
- 1 pinch salt
Topping
- 1/2 cup grated coconut
coconut cream, to taste
How to make
- Winnow the bean to remove the husks and pick out broken beans and impurities.
- To add flavour, performs this optional step of heating the beans briefly on a hot steel pan without oil. this add a slightly singed taste, but be careful not to burn them.
- Place the mung beans, coconut milk,, ginger and pandan leaves into a pressure cooker and bring to a boil.cover
- Pressure cook at 1 bar/ 15 bar for 7 minutes.Turn off heat and allow it to cool for 20 minutes. Open cover and check whether the beans are cooked throughly. sometimes the beans have to be brought back to a simmer to cook them a little more and reduce the liquid.
- Add sugar and a pinch of salt. Serve with grated coconut and coconut cream.
