Okay genk, back again and nice to see you, today we ready to make tapai or tape again. because tape in last week it's not perfect, so we try agian and hope this time it's not fail. for you information, tape have some interesting thing, tape have some benefits for human body, like :
- Contains probiotics which can help digestion in the body.
- Can bind and remove Aflatoxin (poisons) from the body.
- Can prevent anemia because it contains Vitamin B12.
- Contains bioactive components that act as antioxidants to ward off free radicals.
- Contains Vit B1 (Tiamina) which is needed by the nervous system, muscle cells, and digestion.
- Consumed for a long time (in certain doses), can prevent strokes and heart attacks.
- Contains antioxidants that are useful for the prevention of cancer, premature aging, and various degenerative diseases.
- Consuming Black Glutinous Tape can cause a feeling of warmth.
Ingredients :
- 1 kg of black sticky rice
- 2 grains of yeast tape, dry and puree
- 6 large banana leaves
- 4 tablespoons of sugar
Procedure :
- Wash clean sticky rice. Soak sticky rice for 7 hours. Then steam for about 30 minutes. Remove the sticky rice and transfer it to the container, then water it with running water while stirring well. Drain well.
- Heat steam, and add sticky rice. Steam again until cooked about 30 minutes.
- Let it cold the cooked glutinous rice in the tray until it becomes normal (cold). Then sprinkle the mashed yeast on the side. Mixing with a vegetable spoon until it's completely flat.
- Then transfer the sticky rice to a container that is easy to wrap in banana leaves. During yeast administration, make sure it is not contaminated by hand or other ingredients, especially salt etc. Wrap neatly with banana leaves until there is no room for air to enter. Place the container with the stick in a dark room for 2 days.
- The fermented sticky rice can be sprinkled with sugar again, if you like it sweet. And the black sticky rice tape is ready to serve.
