  • Clay Pot
A pot made of unglazed or glazed pottery for cooking. Clay pots are initially seasoned with oil and hot water but may be fully seasoned only after the first several uses, during which food may take longer to cook.

The food inside the pot loses little to no moisture because it is surrounded by steam, creating a tender, flavorful dish. Water absorbed within the walls of the pot prevents burning so long as the pot is not allowed to dry completely. Because no oil needs to be added with this cooking technique, food cooked in clay is often lower in fat than food prepared by other methods.

  • Fish Scaler (Urokohiki)


This kitchen tool is made to easily remove the scales attached to the skin of a fish that will be prepared and cooked whole. Since filleting a fish will remove the skin and scales with it, scaling the fish will not be a concern. However, fish that are cooked whole with the skin intact require that a Fish Scaler be used for easy removal and stripping away of the scales, which are not an edible part of the fish. The Fish Scaler is built with a jagged stripping blade that lifts the scale and then extracts it as it is moved over the scales joined to the skin. The curved buffer that is built opposite the blade keeps the scales from being thrown in random directions as they are removed with manual force. Made from stainless steel, the Fish Scaler is easy to clean after each use.

  •  Lobster Pick
A utensil that is used to remove meat from the small cavities and areas that are difficult to reach within a whole lobster. This tool is generally made of stainless steel and may have one or two ends that are formed for use as a fork, pick, and narrow spoon-shaped extractor. A lobster pick or lobster fork as it is also called, can be used for other shell fish, such as crab and crayfish.
